One pot breakfasts are such a quick and easy way to feed the masses.
What You'll Need - Serves 2
- 2 Large Cooked Potatoes
- 4 Beef or Pork Cocktail Sausage
- 1 Tomato
- 1/2 Onion
- 2 Garlic Cloves
- 4 Eggs
- 6 Button Mushrooms
- 4 Rashers of Streaky Bacon
- 1 Tsp Dried Oregano
- 1/2 Tsp Smoked Paprika
- Salt & Pepper
- Cooking Oil
Prep: 10 Minutes
- Heat oil in a pan and fry the sausages until cooked
- Cut up the cooked potatoes into chunks
- Finely dice your onion and garlic
- Dice the tomato & mushrooms into chunks
- Cut up the streaky bacon into pieces
Let's Get Cooking - 15 Minutes
- In an oven proof pan, heat oil
- Add the onion, mushroom and garlic and cook until the mushrooms are coked
- Add the bacon and cook.
- Add back the cooked sausages and potatoes and combine
- Add the diced tomatoes
- Season with salt, pepper, paprika and oregano
- Combine and cook until the tomatoes are almost cooked
- Place the pot aside and open up 4 spaces in the pan to break the eggs into
- Break the eggs into the pan. Sprinkle some salt onto the eggs.
- Place the pan into the oven and bake for about 5 minutes (until the egg whites are firm but the yolk is still runny)
- Serve and enjoy
