Chicken - the true love of my love 😍

I can’t get over how versatile Chicken is and if you’ve noticed, this folder is full of chicken recipes. This recipe is something different and can also be made with chicken breasts.

What You’ll Need - Serves 4

  • 8 Pieces of Chicken (Thighs & Drumsticks)

  • 1 Large Juicy Orange or 1/2 Cup Orange juice

  • Thumb Size Piece of Ginger

  • 4 Garlic Cloves

  • 2 Red Chilies

  • 30ml Honey

  • 30ml Dark Soy Sauce

  • 1 Cup Chicken Stock

  • 2 Tbs Rice Vinegar

  • Half a lemon

  • Pepper

  • Sesame Seeds and Spring Onion to serve

Prep - 10 Minutes

  • Generously season your chicken pieces with salt and pepper.

  • Peel and lightly crush the garlic cloves

  • Peel and slice the ginger into thing sticks

  • Bruise the chilies (If you don’t like too much heat, you can remove the seeds from the chili)

Let’s Get Cooking - 30 Minutes

  • Heat some cooking oil in a large frying pan with a lid

  • Make sure the pan is very hot and place the chicken pieces skin side down.

  • Fry the chicken pieces until the skin is golden brown. The more colour you can get on your chicken the more flavourful your chicken will be.

  • Once all the chicken has been browned on both sides. Remove them from the pan and set aside.

  • Leave the pan on the stove and add the garlic,chili and ginger and sauté for a minute. (Feel free to drain any excess oil before this step)

  • Squeeze in the juice of the orange.

  • Add the chicken stock, orange juice, honey, soy sauce and rice vinegar and juice from the lemon.

  • Allow the sauce to come to a simmer and season with pepper.

  • Add the chicken pieces back to the pan with the skin side up and cover with a lid. Allow to simmer for 20 minutes until the chicken is cooked and the sauce has reduced and slightly thickened.

  • Spoon the sauce over the chicken when serving.
