I am a lover of lentils but sadly they have such a bad reputation for being tasteless. I am so convinced i can convert anyone into loving lentils with this recipe.
What You'll Need
1 cup uncooked brown lentils
2 cups vegetable stock
125g cherry tomatoes
1 tsp tomato paste
2 cups of spinach
1 onion
2 tsp smoked paprika
1 tsp oregano
1 tsp thyme
Salt and pepper to taste
Prep - 5 Minutes
Dice Onion
Half Cherry tomatoes - You can choose to leave them whole
Roughly chop spinach
Let's Get Cooking - 40 Minutes
In a pot, Cook the lentils in the vegetable stock with a pinch of salt and cook according to the packet instructions. Alternatively use canned lentils that have been rinsed under cold water.
Once the lentils are cooked, set aside.
In a pan, heat 2 tablespoons of vegetable oil.
Add the onions, saute until cooked.
Add the tomato paste and combine with the onions.
Add the cherry tomatoes and half a cup of water allow to cook until the tomatoes start to soften.
Season with thyme, oregano, and paprika.
Add the lentils and the vegetable stock and bring to a simmer on medium heat for 5 minutes.
Add the spinach and allow it to wilt and combine with the lentils.
Taste for salt and pepper and season accordingly.
Serve and enjoy.
