You can add and substitute whatever vegetables you want into this recipe.

What You’ll Need - Serves 4

  • 250g Bok Choy

  • 250g Sugar Snaps

  • 250g Shiitake Mushrooms

  • 2 Tbs Fish Sauce

  • 2 Tbs Soy Sauce

  • 2 Tbs Peanut butter

  • Salt & Pepper

Prep - 5 Minutes

  • Half your Bok Choy

  • Slice Mushrooms into thick chunks

  • Dilute the peanut butter with some hot water into a thick sauce

Cook Time - 15 Minutes

  • Heat Cooking oil in a large pan

  • Start by frying and wilting the Bok Choy and put aside.

  • Next add mushrooms and the sugar snaps and fry until cooked.

  • Add back the Bok Choy and combine.

  • Season with fish sauce, soy sauce, salt and pepper and combine

  • Pour the peanut sauce over the vegetables and combine and it’s ready.
