People underestimate how versatile carrots can be. Besides tossing them in stews and coleslaws, roasted carrots are a great way to use these nutritious vegetables. This recipe uses cumin, smoked paprika and a sprinkle of sugar to create flavourful and sweet roasted carrots served with creamy hummus.
What you’ll need - serves 4
500g medium carrots (baby carrots also work well)
1 tsp smoked paprika
1 tsp cumin
1 tsp minced garlic
1 tsp brown sugar
4 tbs canola oil
50ml water
Salt and pepper to taste
50g Feta
150g Hummus
Parsley
Prep - 10 minutes
Preheat the oven at 200 degrees grill.
Slice the carrots in half lengthways.
Season the carrots with the cumin, smoked paprika, garlic, brown sugar, salt and pepper.
Drizzle the canola oil on the carrots and combine everything until the carrots are evenly coated with the spices.
Let’s get cooking - 40 minutes
Place the carrots in a single layer and pour the water into the baking tray.
Roast in the oven for 30-40 minutes until soft and slightly caramelized.
Spread the hummus on a plate or serving dish.
Place the roasted carrots onto the hummus.
Break and sprinkle the feta over the carrots.
Garnish with chopped parsley and serve.
