Pasta salad is such a firm favourite with many people and everyone has their version. This version adds a different flavour profile to a normal pasta with the addition of a garlicky, curry and smoked paprika oil. Change up the vegetables to whatever you have available.

What You’ll Need - Serves 4-6

  • 250g fusilli pasta

  • 1 baby cucumber, cored and chopped

  • 1/2 sliced red onion

  • 1/2 cup green olives, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup sweet corn kernels, cooked

  • 1 carrot, grated

  • 1 cup mayonnaise

  • 1/2 cup milk

  • Juice of 1 lemon

  • 2 tsp brown sugar

  • 4 garlic cloves, minced

  • 2 tsp mild curry powder

  • 1/2 tsp turmeric powder

  • 1/2 cup vegetable oil

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • Chopped parsley

Let’s get cooking - 20 minutes

  • Cook your pasta according to the instructions on your packet.

  • Once the pasta is cooked, strain in a colander and rinse thoroughly under cold water.

  • In a pan, heat the oil and add the minced garlic. Fry until fragrant, making sure not to burn the garlic.

  • Once you can smell the garlic, add the curry powder, smoked paprika and turmeric.

  • Stir for a minute and remove off the stove.

  • Allow the mixture to cool down.

  • In a bowl, combine the mayonnaise, milk, lemon juice and the brown sugar.

  • Add salt and pepper to taste.

  • Add in the oil and spices mixture into the mayonnaise mixture and combine well.

  • In a large bowl, add the pasta and vegetables.

  • Add the mayonnaise mixture and combine well.

  • Add parsley and combine well. Serve chilled.
