Pasta salad is such a firm favourite with many people and everyone has their version. This version adds a different flavour profile to a normal pasta with the addition of a garlicky, curry and smoked paprika oil. Change up the vegetables to whatever you have available.
What You’ll Need - Serves 4-6
250g fusilli pasta
1 baby cucumber, cored and chopped
1/2 sliced red onion
1/2 cup green olives, diced
1/2 cup cherry tomatoes, halved
1/2 cup sweet corn kernels, cooked
1 carrot, grated
1 cup mayonnaise
1/2 cup milk
Juice of 1 lemon
2 tsp brown sugar
4 garlic cloves, minced
2 tsp mild curry powder
1/2 tsp turmeric powder
1/2 cup vegetable oil
1 tsp smoked paprika
Salt and pepper to taste
Chopped parsley
Let’s get cooking - 20 minutes
Cook your pasta according to the instructions on your packet.
Once the pasta is cooked, strain in a colander and rinse thoroughly under cold water.
In a pan, heat the oil and add the minced garlic. Fry until fragrant, making sure not to burn the garlic.
Once you can smell the garlic, add the curry powder, smoked paprika and turmeric.
Stir for a minute and remove off the stove.
Allow the mixture to cool down.
In a bowl, combine the mayonnaise, milk, lemon juice and the brown sugar.
Add salt and pepper to taste.
Add in the oil and spices mixture into the mayonnaise mixture and combine well.
In a large bowl, add the pasta and vegetables.
Add the mayonnaise mixture and combine well.
Add parsley and combine well. Serve chilled.
