These chicken tenders or fingers are a greats snack for both adults and kids.
What You'll Need - Serves 3 -4
4 Chicken Breasts
2 Eggs
4 Garlic Cloves Minced
2 Tsp Paprika
2 Tsp Dry Oregano
1 Lemon
Salt & Pepper
Bread Crumbs (Try use larger breadcrumbs for crispier coating)
Flour
Prep - 25 Minutes
Slice the chicken breasts in the middle, dividing it into 2 flat sheets.
Slice these sheets into 3 equal parts giving you 6 pieces of chicken per breast.
Place the pieces into a bowl and season with salt, pepper, paprika, oregano and minced garlic. Add the juice of the lemon and combine.
Allow this marinade for 15 minutes.
Break the 2 eggs in a bowl and whisk
Set up the flour and bread crumbs on separate plates
Lightly flour your hands and take each chicken strip and first dip into the four, then the egg and then the breadcrumbs.
Place each crumbed piece of chicken onto a plate giving them enough space so they aren’t touching one another.
Once you’ve coated all the chicken, place in the freezer for 5 - 10 minutes to make sure the breadcrumbs adhere to the chicken.
Let's Get Cooking - 10 minutes
Place cooking oil (about 2 cups) in a large pan and allow it to heat up.
Once the oil is hot reduce your stove to medium - high heat
Place the tenders one at a time in the hot oil and fry until golden brown. Make sure you don’t overcrowd the pan by putting too many tenders at a time.
Serve with a side salad for a light lunch
