Perfecting simple scones can be such a tall order. I created this recipe on a weekend where I was craving scones but didn’t have the usual ingredients I make them with including butter. To my surprise, they are the best scones I had ever made.
What You’ll Need - Makes 10 - 12 Scones
2 Cups All Purpose Flour
4 Tsp (leveled) Baking Powder
1 Egg
200ml Buttermilk
1/4 Cup Vegetable Oil
2 Tablespoon Sugar
Pinch of Salt
Prep - 10 Minutes (Optional)
If you don’t have buttermilk, just use full cream milk and 1 teaspoon of lemon juice or apple cider vinegar. Let this sit for 10 - 15 minutes so it can curdle. (Note: If using homemade buttermilk, it won’t be as thick as store bought so you might use less than the 200ml mentioned. Add slowly until the dough comes together)
Place a baking tray into the oven and preheat at 200 degrees.
Let’s Get Cooking - 25 Minutes
Mix all the wet ingredients (Egg, buttermilk,and oil) in a bowl and combine
Sift the flour, salt, sugar and baking powder into a bowl.
Add the wet ingredients and combine.
Flour a clean surface and transfer the dough onto the surface.
Flour your hands and knead the dough carefully until smooth adding flour when necessary. (Make sure you don’t add too much flour or it will make the scones hard)
Roll the dough out into about 2cm thickness. The scones will rise but if you want them to have great height, don’t roll the dough too thin.
Cut out the scones using your preferred cutter and place onto the oven baking tray.
Bake for 10 - 12 minutes until golden brown
