Savoury muffins make for a great breakaway from the usual sweet variation. These Baby marrow muffins freeze well so you can pop one in the microwave for a quick treat.
What You’ll Need - Makes 12 Muffins
2 Cups Flour
2 Tsp Baking Powder
2 Eggs
6 Baby Marrows
2 Spring Onions
150g Cheddar Cheese
50g Feta
1/2 Tsp Salt
1/4 Tsp Black Pepper
4 Tbs Vegetable Oil
3/4 Cup Milk
Prep - 15 Minutes
Grate the baby marrows using the smaller side of your grater. You want them to be thing strands.
Finely dice the spring onions
Grate the cheddar cheese
Preheat oven at 180 degrees
Grease a muffin pan
Let’s Get Cooking - 45 Minutes
In a large bowl, combine the wet ingredients (Eggs, milk and oil)
Add the spring onions, baby marrow and cheese (leaving a handful to sprinkle on top of the muffins) into the wet mixture.
Add the dry ingredients (Flour, salt, pepper, baking powder) and fold gently until all the ingredients have combined.
Crumble in the feta and combine
Scoop the batter into muffin pan. Sprinkle some cheese on top of each muffin.
Bake in the preheated oven for 25 - 30 minutes until cooked through.
