Casseroles have been known to be bland but i can guarantee you there's nothing bland about this one. 

What You'll Need (You can adjust quantities to feed less people)

  • 8 Pieces of Chicken Thighs

  • 1 Can Tomatoes

  • 1 Can Chickpeas

  • 1 Tbs Paprika

  • 1 Tsp Smoked Paprika

  • 1 Tsp Ground Cumin

  • 2 Tsp Dry Oregano

  • 4 Garlic Cloves

  • 2 Red Onions

  • 2 Cups Chicken Stock

  • Salt and Pepper

Prep - 10 Minutes 

  • Season the chicken with salt and pepper

  • Roughly chop your onions into large chunks

  • Crush your garlic with the back of a knife and peel it. We’re going to leave it whole

  • preheat oven to 200 degrees Celsius (bake)

Let's Get Cooking - 45 Minutes 

  • In a pan, heat cooking oil. Make sure the pan and the oil are very hot before the next step

  • Place the chicken pieces in the pan to seal the meat - put in 2 -4 pieces at a time depending on the size of your pan

  • Fry each side of the meat until golden brown and then set aside.

  • Once all the meat is cooked, place the chopped onions and garlic in the same pan and fry until onions are soft.

  • Add in the can of tomatoes and combine. Add all your spices to the pan and season with salt and pepper.

  • Add in the chicken stock and allow it to come to a boil.

  • Add in the chickpeas and combine.

  • Transfer the tomato gravy into a large ovenproof dish and place the chicken pieces on top.

  • Bake in the oven for 30 minutes uncovered.

  • Serve with chopped olives and capers (Optional)
