Casseroles have been known to be bland but i can guarantee you there's nothing bland about this one.
What You'll Need (You can adjust quantities to feed less people)
8 Pieces of Chicken Thighs
1 Can Tomatoes
1 Can Chickpeas
1 Tbs Paprika
1 Tsp Smoked Paprika
1 Tsp Ground Cumin
2 Tsp Dry Oregano
4 Garlic Cloves
2 Red Onions
2 Cups Chicken Stock
Salt and Pepper
Prep - 10 Minutes
Season the chicken with salt and pepper
Roughly chop your onions into large chunks
Crush your garlic with the back of a knife and peel it. We’re going to leave it whole
preheat oven to 200 degrees Celsius (bake)
Let's Get Cooking - 45 Minutes
In a pan, heat cooking oil. Make sure the pan and the oil are very hot before the next step
Place the chicken pieces in the pan to seal the meat - put in 2 -4 pieces at a time depending on the size of your pan
Fry each side of the meat until golden brown and then set aside.
Once all the meat is cooked, place the chopped onions and garlic in the same pan and fry until onions are soft.
Add in the can of tomatoes and combine. Add all your spices to the pan and season with salt and pepper.
Add in the chicken stock and allow it to come to a boil.
Add in the chickpeas and combine.
Transfer the tomato gravy into a large ovenproof dish and place the chicken pieces on top.
Bake in the oven for 30 minutes uncovered.
Serve with chopped olives and capers (Optional)
