Mackerel comes in a variety of different sizes the smallest being sardines and the largest king mackerel. This oily fish works extremely well with spicy flavours . Its easy to find and very affordable. I like to eat my mackerel with a spicy, garlicky tomato relish.
What You'll Need
- 2 King Mackerel Fillets
- 1 Red Onion
- 1 Can Tomatoes
- 4 Garlic Cloves
- 2 Tablespoons Tomato Paste
- 1 Teaspoon Paprika
- 1 Teaspoon Ground Cumin
- 2 Teaspoons Dry Oregano
- 2 Chilies
- 2 Lemons
- 3 Tablespoons Olive Oil
- 1 Tablespoon Butter
- Salt & Pepper To Taste
- 1/4 Cup Water
Prep - 5 Minutes
- Marinade your fish fillets in salt, pepper and the juice of one lemon
- Chop Onions
- In a blender add your onion, garlic, can of tomato and chilies and blend into a paste
Let's get Cooking - 20 Minutes
- In a pan heat 2 tablespoons of olive oil
- Pour the paste from the blender into the pan
- Season with salt, pepper, paprika, ground cumin and Oregano
- Add the tomato paste and 1/4 cup of water
- Allow to simmer for 10 minutes at low heat. Add the juice of half a lemon and remove from the heat.
- In another pan, heat 1 tablespoon of olive oil and a tablespoon of butter at medium heat
- Place your Mackerel skin side down and fry for 4 minutes (Take a tablespoon and scoop the oil from the pan and continuously baste the top of the fish)
- Flip over and fry for an additional 2 minutes
- Allow the fish to rest for 3 minutes
- Serve with the tomato relish and enjoy
