Mackerel comes in a variety of different sizes the smallest being sardines and the largest king mackerel. This oily fish works extremely well with spicy flavours . Its easy to find and very affordable.  I like to eat my mackerel with a spicy, garlicky tomato relish. 

What You'll Need 

  • 2 King Mackerel Fillets 
  • 1 Red Onion 
  • 1 Can Tomatoes 
  • 4 Garlic Cloves 
  • 2 Tablespoons Tomato Paste
  • 1 Teaspoon Paprika 
  • 1 Teaspoon Ground Cumin
  • 2 Teaspoons Dry Oregano 
  • 2 Chilies
  • 2 Lemons
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Butter 
  • Salt & Pepper To Taste
  • 1/4 Cup Water 

Prep - 5 Minutes 

  • Marinade your fish fillets in salt, pepper and the juice of one lemon
  • Chop Onions 
  • In a blender add your onion, garlic, can of tomato and chilies and blend into a paste 

Let's get Cooking - 20 Minutes 

  • In a pan heat 2 tablespoons of olive oil
  • Pour the paste from the blender into the pan 
  • Season with salt, pepper, paprika, ground cumin and Oregano 
  • Add the tomato paste and 1/4 cup of water 
  • Allow to simmer for 10 minutes at low heat. Add the juice of half a lemon and remove from the heat. 
  • In another pan, heat 1 tablespoon of olive oil and a tablespoon of butter at medium heat
  • Place your Mackerel skin side down and fry for 4 minutes (Take a tablespoon and scoop the oil from the pan and continuously baste the top of the fish) 
    • Flip over and fry for an additional 2 minutes
  • Allow the fish to rest for 3 minutes
  • Serve with the tomato relish and enjoy
