This oven baked fish recipe works with several types of fish fillets including Tilapia, Kingklip, Salmon, Trout and Hake.

What You Need

  • 2-4 Fish Fillets

  • 2 Tbs Butter

  • 2 Tbs Sundried Tomato Pesto

  • 2 Garlic Cloves

  • Juice 1/2 Lemon

  • 2 Tbs Capers

  • Salt and Pepper

Prep - 10 Minutes

  • Preheat your oven to 200 degrees bake.

  • Finely mince your garlic cloves.

  • Pat your fish dry with a paper towel and place in an oven proof dish.

  • Sprinkle salt and pepper onto your fish.

Let’s Get Cooking - 20 Minutes

  • Heat a small pot or sauce pan at medium heat.

  • Add your butter and garlic and allow for the butter to melt.

  • Using a whisk, add the Sun dried tomato pesto and whisk together until combined with the butter and garlic.

  • Add the capers in and combine.

  • Taste the sauce for salt and add if needed and pepper to taste.

  • Remove off the stove and squeeze the juice of the lemon and combine.

  • Pour the sauce over the dish in the ovenproof dish.

  • Place the dish in the oven uncovered and bake for 12-15 minutes until the fish is cooked.

  • You’ll know the fish is cooked when it’s firm to the touch at the thickest part of the fillet.
