I usually batter my fish when frying (I have a recipe for this as well) but decided to experiment with a buttermilk fried fish. The result is a crispy coating that’s super delicious.
What You’ll Need - Serves 2
2 Large Hake Fillets
250ml Buttermilk
1 Cup Flour
1 Tsp Baking Powder
1 Tsp Paprika
1 Tsp Garlic Powder
1 Tsp Onion Powder
Salt & Pepper
Oil for deep frying
Prep - 30 Minutes
Season your fish fillets with salt and pepper.
Place the fish in a shallow bowl/plate and pour the buttermilk over the fish making sure it’s covered.
Place in the fridge to marinade for 15 - 30 minutes.
Let’s Get Cooking - 15 Minutes
Heat enough oil in a pan to medium to deep fry your fish.
While the oil is heating up, mix the flour, baking powder, paprika, onion powder and garlic powder. Season with salt and pepper.
Remove the fish from the buttermilk and place in the flour and gently coat the fish using a spoon or your hands.
Place the coated fish in the hot oil skin side up (the part of the fillet that has/had the skin should be facing up first)
Fry until golden brown 3-4 minutes and turn the fish over and repeat on the second side.
Place cooked fish on a paper towel to drain excess oil.
Best served hot.
