What You’ll Need - Serves 2
1 whole tilapia
1/2 yellow onion
200g chopped tomatoes
1 tsp mild curry powder
1 tsp chilli flakes (optional)
2 tsp paprika
3 cups vegetable stock
Juice of half a lemon
2 tbs cooking oil of your choice.
Salt to taste
Prep - 10 minutes
Finely dice the onion.
Rinse tilapia and pat dry with kitchen paper.
Cut the tilapia into 3 pieces; the tail, the middle, and the head.
Let’s Get Cooking - 30 minutes
In a pot, heat your preferred cooking oil.
Add the chopped onions and fry on medium heat and fry until soft.
Add the tomatoes and combine while smashing the pieces to break them up.
Once the tomatoes are mashed, add your spices; curry powder, paprika, and chilli flakes.
Combine well then season with salt.
Add the vegetable stock and bring the sauce to a simmer on medium heat for 5 minutes.
Add your fish pieces and simmer on medium heat for 15 minutes (turn the fish half way).
Remove the fish off the heat and squeeze the juice of the lemon into the stew.
Serve with any sides of your choice.
