If you hate peanut butter (or have allergies), I’m sorry but this isn’t for you. The peanut sauce is the most delicious and indulgent salad dressing ever. It’s creamy, flavourful, and nutty with a hint of spice. Leave out the chicken for a vegetarian option.

What You’ll Need - Serves 2-3

  • 2 chicken breasts shredded

  • 2 cups chopped red cabbage

  • 2 cups chopped cos lettuce

  • 1 carrot sliced into matchsticks

  • 1/4 cucumber sliced into matchsticks

  • 1/2 cup sweet corn kernels

  • 10g fresh coriander roughly chopped

  • 4 spring onions chopped

  • 1/2 cup peanut butter of your choice

  • 1 tbs grated ginger

  • 2 garlic cloves

  • 1 tsp chilli flakes

  • 2 tbs light soy sauce

  • 2 tbs fish sauce

  • 1 tbs brown sugar

  • 1 lemon

  • 4 tbs of warm water

  • salt and pepper to taste

Let’s Get Cooking - 15 minutes

  • In a large salad bowl, add the following: peanut butter, soy sauce, fish sauce, chilli flakes, brown sugar, garlic, ginger, lemon juice, and water.

  • Using a whisk, stir the ingredients until they are combined into a sauce.

  • Taste for salt and season with salt and pepper to taste.

  • Add the shredded chicken, lettuce, red cabbage, spring onions, coriander, and corn into the bowl with the sauce.

  • Mix all the ingredients until everything is coated in the sauce.

  • Serve immediately.
