How do we feel about green soup? Many might be put off by the colour alone but I promise you, it’s delicious and hearty and tastes nothing like green juice.

What You’ll Need - Serves 4

  • 2 cups frozen peas

  • 2 cups broccoli (florets)

  • 1 cup chopped spinach

  • 1 large potato

  • 1 cup chopped spinach

  • 1 onion

  • 2 garlic cloves

  • 4 cups vegetable stock

  • 1/2 cup fresh cream

  • 2 sprigs fresh sage

  • 4-6 sprigs fresh thyme

  • salt and pepper to taste

Prep - 5 Minutes

  • Peel and dice the potato.

  • Finely dice the onion and garlic.

Let’s get cooking - 30 Minutes

  • In a pot heat 2 tablespoons of oil and fry your onion and garlic at medium heat until soft. - It’s important that you do not burn the onions and garlic as this will affect the colour of the soup.

  • Add the potatoes, herbs and stock and simmer until the potatoes are cooked.

  • Once the potatoes are cooked, add the peas, spinach and broccoli and simmer for another 2 minutes.

  • Take out the thyme springs out before blending.

  • Using a stick blender or add the soup contents to your stand blender and blend until smooth.

  • Place back into a pot if using a stand blender and bring to a simmer on medium heat. Loosen up with more stock to your desired consistency.

  • Season with salt and pepper to taste.

  • Add the cream and remove off the heat.

  • Served with more cream and croutons or bread.
